Preparation

  1. Step 1

    Preheat the oven to 450 degrees. Sift together the flour, baking powder, baking soda and salt. Cut the cold butter into the flour until it resembles coarse meal. Stir in the sage. Stir in the buttermilk until the dry ingredients are just moistened.

  2. Step 2

    Lightly flour your hands and gather the dough into a ball. Lightly flour a work surface and place the dough on it. Using your hands, form the dough into a square about ½ inch thick and roughly 7 inches by 7 inches. Cut the dough into 9 squares and transfer them to a baking sheet. Brush the tops with the melted butter and bake until golden brown, 12 to 14 minutes. Serve warm.

I used Greek yogurt and water instead of buttermilk. This will likely be a permanent recipe for me.

I've morphed this recipe into a rosemary cheese biscuit recipe. It has become a go to recipe and it is always a hit. Just replace the sage with rosemary and just before you add the buttermilk, add grated cheese. I eyeball it, but it is probably about a cup. I usually use white sharp cheddar cheese, but I've used other kinds of cheese and it's turned out great. This is an excellent base recipe to work from for all kinds of experimenting. Onward!

Easy hack if you don't have buttermilk, 3/4 cups of milk + 1 tablespoon of lemon juice (about 1/2 a small lemon), stir & let it sit for a minute or 2. Excellent recipe, I added some fresh thyme as well (about a tablespoon).

Tried half recipe. Not enough sage or salt, but quick and easy. Try with more sage or rosemary. More of a breakfast biscuit, with eggs and bacon.

Easy to make but a bit dry and bland.

This recipe is a keeper. The biscuits were crispy on the outside and light and fluffy on the inside. Also very quick and easy, and I'm sure can be adapted to many different flavor profiles.
