Ingredients

  • ½pound fresh okra, washed, with ¼-inch stem attached
  • 1recipe vinaigrette (see recipe)
  • 1tablespoon loosely packed fresh basil leaves (preferably the tiny bush basil leaves, but if they aren't available, then the smallest leaves, finely shredded)

Preparation

  1. Step 1

    Bring two quarts of heavily salted water to the boil. Blanch the okra for exactly five minutes. Drain and refresh under cold running water for five minutes. Drain. Toss okra, vinaigrette and basil. Allow to marinate for 30 minutes before serving. This salad may be made up to four hours ahead of time.

This dish is super slimy. We selected it because we had a lot of okra in the garden that needed to be used, and wanted to try something new, but we were not impressed. In addition to the sliminess, this recipe does not call for enough basil. Good luck.
