Ingredients

  • ½cup chopped dill pickles
  • 1teaspoon finely chopped shallots
  • 1teaspoon chopped pickled hot peppers
  • 1teaspoon chopped parsley
  • 1cup unseasoned mayonnaise, homemade if possible
  • Cider vinegar to taste
  • Salt to taste
  • Cayenne pepper to taste

Preparation

  1. Step 1

    Add pickles, shallots, hot peppers and parsley to mayonnaise. Let stand at least an hour. The vegetables will season the mixture.

  2. Step 2

    Adjust seasoning with vinegar, salt and cayenne.

I used what I had: onions, pepperoncini, jarred red pepper, parsley, mayo. It was a match made in Heaven with the Lees’ Shrimp Burgers recipe. Next time maybe a few drops of black vinegar?
