    Preheat oven to 425 degrees. Place the roast crown-side down in a roasting pan. Bake for an hour. Turn the roast over and place on a serving platter. Decorate each rib bone with a paper cutlet frill, if desired (they are available at Zabar's, 2245 Broadway, at 80th Street, Manhattan). Serve immediately.

I am not sure why this recipe demands such high heat for an hour. If you like your lamb chops rare to medium rare, you can't cook it at 425 for more than 30 min max, probably less (I am still trying to find the sweet spot).

Agree that an hour at 425 is too long. It would be best to start checking the temperature after about 30 minutes.
