Bourbon-Chocolate Pecan Pie

Ingredients
- 19-inch pie crust
- 3large eggs lightly beaten
- â…“cup sugar
- 3tablespoons firmly packed light brown sugar
- 1tablespoon all-purpose flour
- Âľcup light corn syrup
- ÂĽcup butter, melted
- 3tablespoons good bourbon
- 1cup semisweet-chocolate morsels
- 2cups pecan halves
Preparation
- Step 1
Preheat the oven to 350 degrees. Fit the pie crust into a pie plate, prick the bottom with a fork and set aside.
- Step 2
Combine the eggs, sugar, brown sugar, flour, corn syrup, melted butter and bourbon in a bowl. Lay the pecans evenly across the bottom of the pie crust. Top with the chocolate bits. Pour the egg mixture over the nuts and chocolate and bake for 50 to 55 minutes, until firm. Serve with whipped cream or vanilla ice cream.

Really good recipe. Minor modifications based on supplies - sub'd dark brown sugar for light, and used bittersweet chocolate. That offset the sweetness nicely. Don't skip the bourbon, it adds so much smoky depth. I also chopped 1 cup of pecans and stirred those into the egg mixture, then poured that over the layer of pecan halves and chocolate. 50 minutes was perfect. This was absolutely gobbled up!
Agree with adding bittersweet though I might add a little less. Was generous with the bourbon. this was a huge thanksgiving hit.
