Preparation

Cook minced slab bacon until done; remove from pan with a slotted spoon. Add mixed nuts, chopped fresh rosemary and a sprinkle of brown sugar. Cook, tossing, until nuts are golden and fragrant. Add the cooked bacon, and stir.

Good Evening: Removed all but 2 tablespoons of bacon fat before adding 4 oz. each of cashews, pecans, walnuts, pistachios. Also threw in 0.5 cups each of dried cranberries and apricots. 1.5 cups of bacon at the end, along with salt and pepper. Much less greasy than tina's result. Friends liked it.
very good easy recipe for nuts. However, since the recipe didn't call for it, I didn't remove the bacon fat. The result was the nuts were delicious but greasy. The lack of quantities didn't deter me, but in retrospect I could have used some sense of how much bacon for how much nuts. My first batch could use some more....(all recipes with bacon can use some more!!!!!!)
Buy a slotted spoon
Why wouldn’t cubed pancetta ( good supermarkets have this) be a far easier option than having to mince bacon? I get a nice SMOKED one at Kroger. Not too hard to mix a little olive oil with the ( drained) bacon if a less’greasy’ result desired... the addition of a good shake of ground cayenne pepper gives nice edge if spicey is your bag....mixed nuts far more interesting- but the rosemary is the winner ! Unexpected & delightful- everyone loves this combo!
What's not to like about the ingredients? However, for the most part, most recipes will provide some estimates on quantities and here, there are none. A "slab of bacon" is usually sold in several pound increments. Do we really need to mince a 4-pound slab of bacon here? Possible, if you're going to use 10 pounds or more of mixed nuts . . .
Use raw (and unsalted) nuts. Recipe implies. I drained some grease, too, leaving about 3 tbs for just shy of 2lbs nuts.
