  • 4cups vegetables (carrots, celery, onions, broccoli or other)
  • 2teaspoons salt
  • sticks salted butter
  • 6cups white flour
  • 1cup whole wheat flour
  • 1cup corn meal
  • 5tablespoons baking powder
  • 1tablespoon black pepper
  • 2cups grated cheese (Jarlsberg, Swiss or cheddar)
  • 1cup vegetable broth or vegetable juice (like V-8)
  • 2cups whole milk

Preparation

  1. Step 1

    Preheat oven to 400 to 425 degrees.

  2. Step 2

    Shred carrots and finely dice remaining vegetables. Set aside in a bowl and sprinkle with salt.

  3. Step 3

    Mix together remaining dry ingredients and black pepper.

  4. Step 4

    Cut butter into dice-sized cubes and blend into flour with pastry blender.

  5. Step 5

    Add cheese to flour mixture and toss together to coat well.

  6. Step 6

    Add vegetables to butter-flour-cheese mixture.

  7. Step 7

    Slowly pour vegetable broth into mixture, mixing quickly.

  8. Step 8

    Add enough milk a little at a time until the desired consistency of sticky but not soupy is achieved. (You may or may not use two cups.)

  9. Step 9

    Drop biscuits, using one-quarter cup, onto ungreased baking sheets.

  10. Step 10

    Bake about 10 minutes, rotate racks and bake 10 minutes more. Biscuits are done when they are browned and sizzly. Keep warm until serving time.

Made this last night, and the flavors were fantastic! Be forewarned - this makes a LOT of mix. When the recipe says "feeds 15 hungry sailors" it really means it. I would definitely make this again, but half or quarter the recipe.
