Ingredients
Yield:About one-third cup
- 2egg yolks
- 2teaspoons Dijon mustard
- ⅔teaspoon red wine vinegar
- ⅔teaspoon mushroom (or plain) soy sauce
- 3teaspoons sugar
- 1tablespoon plus 1 teaspoon vegetable oil
- 2teaspoons Port or Madeira
- 2teaspoons Cognac
Preparation
- Step 1
Place first five ingredients in blender. Run blender 20 seconds, then add oil slowly until mixture thickens. Remove from blender.
- Step 2
Fold in Port or Madeira and Cognac.
- Step 3
Serve with duck.
