Caviar Sour Cream Dip With Potato Chips

Ingredients
- 1cup sour cream
- 1½tablespoons thinly sliced scallions, white and green parts
- 1tablespoon chopped fresh chives
- ¼teaspoon ground white pepper
- Kosher salt, to taste
- About 2 ounces salmon roe or other caviar, for garnish
- Potato chips, for serving
- Celery sticks, for serving
Preparation
- Step 1
In a small bowl, mix together sour cream, scallions, chives, pepper and salt to taste. Let sit at room temperature for at least 10 minutes so the flavors can meld (or chill for up to 24 hours before serving).
- Step 2
Spoon caviar on top and serve with potato chips and celery sticks.

All of you with reservations about the caviar, feel free to send it all to me. Basically this seems like a potato chip version of caviar service--plain water crackers, sour cream, capers (salt and flavor now provided by the chips), a little mild onion flavor for those who like that, and as much caviar as the host will allow you to eat. As with smoked salmon and sour cream on potato chips, I will eat it until I'm sick.
I have always gently folded in the caviar, saving some to sprinkle on top. People devour this!
This was easy and fresh tasting compared to store bought dips. I liked the base dip but a little caviar went a long way for me. My kids and spouse seemed to feel the same. Go easy on the salt as caviar and chips are also salty. Black pepper worked fine too. :)
Made this as written but for using smoked trout roe as the caviar and it was absolutely fantastic.
Doubled the dip. Added sherry vinegar and onion powder. One jar of cavier
Jessie was 7 when Hansen played the H. Bowl, her 1st concert. Her dad, took her. They were back home 1/2 way thru. Jess' ears hurt--too loud. Her dad, crestfallen, got her a toy on way out. It's not Rock n Roll, but I like it!
