Smashing cucumbers instead of slicing them gives the flesh an appealing rough surface, the better to bond with any dressings you dream up. In this salad, from the Manhattan restaurant Superiority Burger, the cold crunchy cucumbers are bound in a creamy lime-spiked yogurt that the chef who invented it, Julia Goldberg, calls “fiercely acidic.” It’s a great combination, and the sweet heat of chile honey and crunch of breadsticks make each mouthful interesting. At Superiority Burger, nutty brown rice is added to the salad for yet another dimension of flavor and texture; the effect is like a rich chicken salad or egg salad, but this is vegetarian and more nutritious over all. —Julia Moskin

Ingredients

Yield:4 to 6 servings

    For the Salad

    • About 2 pounds thin-skinned cucumbers like English or Persian (8 to 10 mini cucumbers, 4 medium-size or 2 large greenhouse)
    • Kosher salt
    • Raw or granulated sugar
    • ½cup Greek-style plain yogurt
    • Freshly grated zest and juice of 1 lime
    • 1tablespoon rice wine vinegar
    • 2tablespoons extra-virgin olive oil, more for drizzling
    • ¼teaspoon black pepper, more to taste
    • 4scallions, minced

    For the Spicy Honey and Breadstick Croutons (optional, for Garnish)

    • ½teaspoon hot sauce
    • 1tablespoon honey
    • cup lightly crushed sesame breadsticks (crush breadsticks in a sealed plastic bag to the size of small croutons)
    • Olive oil, for drizzling

Preparation

  1. Step 1

    Rinse cucumbers and pat dry. Cut crosswise into pieces about 4 inches long. Cut each piece in half lengthwise.

  2. Step 2

    On a work surface, place a piece of cucumber (or several) cut side down. Lay the blade of a large knife flat on top the cucumber and smash down lightly with your other hand. The skin will begin to crack, the flesh will break down and the seeds will separate. Repeat until the whole piece is smashed. Break or slice diagonally into bite-size pieces, leaving the seeds behind.

  3. Step 3

    Place the cucumber pieces in a strainer and toss with a big pinch of salt and a big pinch of sugar. Place a plastic bag filled with ice on top of the cucumbers to serve as a weight and place the strainer over a bowl. Let drain 15 to 30 minutes on the counter, or in the refrigerator until ready to serve, up to 4 hours.

  4. Step 4

    Make the dressing: In a bowl, mix yogurt, lime zest and juice, vinegar, oil, ½ teaspoon salt and the pepper. This mixture should taste fiercely acidic and quite salty; add salt and vinegar as needed. Keep refrigerated.

  5. Step 5

    If making the spicy honey, combine hot sauce and honey in a small bowl and stir well until smooth.

  6. Step 6

    If making the croutons, toast the breadstick pieces in a toaster oven or skillet. Drizzle with olive oil and stir occasionally, until golden and crunchy.

  7. Step 7

    When ready to serve, shake cucumbers well to drain off any remaining liquid and transfer to a bowl. Drizzle lightly with olive oil and toss. Add scallions and half of the dressing and toss gently. Keep adding dressing until cucumbers are well coated but not drowned.

  8. Step 8

    Serve immediately. For each serving, scoop a large spoonful of cucumbers into a bowl, drizzle with spicy honey and sprinkle with a handful of croutons.

I thought this was the best salad I have tried in quite a while. Complex and delicious. Also, in the midst of a very hot summer, this was the perfect antidote.

Didn't smash the cakes -- used a mandoline to get even, thin slices. Don't be put off by the description of a very acidic and salty dressing -- the dressing has a nice round flavor. Couldn't find sesame breadsticks; like other readers, I used sesame crackers. This recipe is a keeper.

Not sure why all the fuss about smashed cucumbers. I tried this, and it was ok, but that's it. And it would have been just as good if the cucumbers were simply cut up and not smashed (by the way, what exactly does "smash down lightly" even mean?). I agree too with Nancy's comments, the spicy honey was not all that spicy (easy to fix) and the croutons were a really nice touch.

This is the best and easiest way to make a cucumber/yogurt dish that makes sense in its application. Smashing cukes like this (tho I do it all in a used but cleaned produce bag for less mess) separates the seeds from the best parts while making the bits, incl unwaxed peel, more amenable to the dressing. Plus using a full closed wine bottle or rolling pin as a smashing tool gets any stress out after a full day. I think it's worth it. Tasty recipe. I will make it again.

The flavors of this are wonderful-- bright and rich. It would taste great with sliced cucumbers, but the smashing does really do A Tasty Thing. The cucumbers feel meaty, somehow, and more crisp. If you use Persian cucs, half the dressing will be plenty. Double the croutons. Heat the honey in the microwave for 8-10 seconds so it's easier to blend with your hot sauce. And try that thing about adding brown rice (mentioned in the introduction). I'm hooked. So savory, bright, unique.

Cucumbers in herbed yogurt sauce is always a fine side, and this version has a good combination of salty, sweet, tangy, and spicy. With the breadsticks it's reminiscent of a cucumber sandwich. It's tasty, but I didn't find it sufficiently rewarding for the amount of time and effort required.
