Oatmeal and Teff With Cinnamon and Dried Fruit

Ingredients
- ⅓cup rolled oats
- 1tablespoon teff
- Salt to taste (I use a generous pinch)
- ⅛teaspoon ground cinnamon
- 1tablespoon chopped dried apricots and/or golden raisins (more to taste)
- ⅔cup water
- 1teaspoon honey, plus additional to taste for drizzling
- ½tablespoon chopped toasted skinned hazelnuts or almonds
- Optional toppings: milk, grated apple or pear

Preparation
- Step 1
The night before, stir together rolled oats, teff, salt, cinnamon and chopped apricots or raisins in a medium microwave-safe bowl. Bring water to a boil and pour over mixture. Add honey and stir, then cover bowl with a plate.
- Step 2
In the morning, microwave mixture for 2 minutes on 100 percent power. Remove bowl from microwave and carefully remove plate (bowl will be hot and steam will rise from cereal). Stir mixture, cover again and return to microwave. Heat for 1 to 2 minutes longer, until mixture is no longer watery.
- Step 3
Transfer to a serving dish and sprinkle chopped nuts over the top. Add other toppings of your choice and serve.

I do not use a microwave. Does the teff require any pre-soaking? Can this be pre-pared in the morning on the stove top?
I make a mix of equal parts thick oatmeal, polenta, and teff seed. To this I add cinnamon, flax seeds, and chopped roasted almonds. I store this in an air tight bag in the freezer. In the morning I take out a rounded 1/4 scoop of this and mix in a bowl with about a 3/4 cups of water. I microwave @ power 7 for 8 minutes. (I have a reeeeally small microwave.) Remove and stir in a tiny pinch of salt and a handful of blueberries. Enjoy
YOu can prepare it as you would oatmeal, but the teff is harder so you should presoak. If you presoak together as directed you can then cook the mixture on top of the stove as you would cook oatmeal.
I’ve made this for years overnight in a crockpot using steel cut oats. I then refrigerate/freeze portions for later use. I do not soak the tiff.
So surprised to see this. I’ve been making this without the fruit or nuts for over 15 years. As a toddler, my granddaughter would push other oatmeal aside saying she wanted “Grammy Oaties.”
I like to make overnight steel cut oats by hard boiling them for about 2-3 minutes in lightly salted water and then letting them sit covered overnight. I'm going to add teff to them and see how that works! Thanks for the idea.
