Haroseth Truffles

Ingredients
- 1tablespoon pomegranate juice, more as needed
- 4grams ground cinnamon (1 teaspoon)
- 186grams pitted dates (¾ cup), coarsely chopped
- 180grams dried apricots (½ cup), coarsely chopped
- 38grams dried cherries (¼ cup)
- 33grams raw sliced almonds (¼ cup)
- 66grams raw pistachios (½ cup)
- 76grams unsweetened shredded coconut (1 cup)
Preparation
- Step 1
In a small bowl, combine the pomegranate juice and cinnamon.
- Step 2
Combine the dates, apricots, cherries, almonds, and pistachios in the bowl of a food processor fitted with the blade attachment. Pulse together until mixture is coarsely combined. Add the cinnamon-juice mixture and process until the mixture forms a smooth, sticky paste. Add more juice, a teaspoon at a time, if the paste does not stick together.
- Step 3
Spread the coconut flakes on a large plate or jelly roll pan. Roll the dough, 1 heaping tablespoon at a time into a ball; roll in the coconut to coat evenly. Store in an airtight container at room temperature.

My family did not trust in my cooking skills until I bring a similar Sephardic haroset truffles to the family Seder six years ago. This recipe is easier than my old one. The truffles are delicious and look beautiful at the Seder table
So easy to make and they look good. They taste like Larabars. I used pecans instead of almonds and orange juice since that's what I had in the house. Probably will make a version of these with some oats as energy bars in the future.
Excellent. I have someone who is allergic to pistachio so I used almonds, pecans, and sunflower seeds. I chose to roll the truffles in ground almonds. They look great and taste great as well.
My advice - make this recipe! Very impressive/lovely presentation. SO easy and very forgiving and flexible - I used cherry juice. Oh and did I mention it is delicious!
Sounds delicious. I'll probably make these tomorrow. I wonder... would a coating of chocolate ganache improve them ? (Assuming no dietary restrictions, that is.)
