Watermelon Burgers With Cheese

Ingredients
- 1small watermelon
- ¼cup olive oil
- 1tablespoon minced onion
- Salt
- black pepper
- 4ounces mozzarella, Monterey Jack, Gruyère or other melting cheese, grated or sliced
Preparation
- Step 1
Heat a charcoal or gas grill to moderately high heat and put the rack about 4 inches from the flame. Cut the watermelon lengthwise, into halves or quarters, depending on the size of the melon. From each length, cut 1½-inch-thick slices; remove the rind from each slice. If there are black seeds, use a fork to remove as many of them as you can without beating the flesh up too much.
- Step 2
Mix the olive oil with the onion and sprinkle with salt and pepper. Brush or rub the mixture all over the watermelon slices. Grill or broil for about 5 minutes on each side. The flesh should be lightly caramelized and dried out a bit. Sprinkle each slice with cheese, cover the grill and cook just until the cheese melts, about a minute.

Serve on buns, toast or hard rolls with the usual burger fixings.

AHH-MAAA-ZINGGGG , it really hits every desired taste bud , from the crunchiness of the toasted bun and lettuce and onions to the sweetness of the juicy watermelon , its great with a side of walnut fruit salad .
This was surprisingly delicious. I didn't have the usual burger fixings other than cheddar cheese but I did have a cucumber tomato salad that I topped it with and it was so good.
Tasty, but I think I prefer just a simple slice of grilled halloumi on a cold slice of watermelon. Sweet and salty, cold and hot. Perfection!
It was simply delicious! I added a bit of smoked paprika to the onion-olive mixture to achieve a grill-like aroma as I grilled watermelon slices on a grill pan on a gas stove. And it works perfectly with a slice of vegan cheddar-style cheese. I will be repeating it a lot during the watermelon season!
