Yogurt-Feta Dressing

Ingredients
- 4ounces feta cheese
- ½cup plain yogurt, preferably whole-milk
- ½cup olive oil, or less
- ½cup chopped fresh mint
- Zest and juice of 1 lemon
- Salt
- Freshly ground black pepper
Preparation
- Step 1
In a blender or food processor, combine feta, yogurt, ¼ cup olive oil, mint, lemon zest and juice; sprinkle with salt and pepper. Blend or process until smooth, adding more oil if you need it to reach a smooth consistency. You can also mash mixture by hand, with a fork.

In lieu of fresh mint, this is lovely with grated cucumber and a garlic clove, à la tzatziki. I leave out the lemon zest for fear of the flavor being too strong.
I used half dill and half mint and a but more olive oil to use it to dress a salad. It’s a keeper,

I think blending feta makes it chalky. I just couldn't make the texture appealing.
