Broccoli Trees With Cheese Sauce

Ingredients
- 2tablespoons butter
- 3tablespoons flour
- 1cup milk (not skim), more as needed
- 1cup coarsely grated Cheddar cheese
- Steamed fresh or frozen broccoli florets
Preparation
- Step 1
Melt butter in a small, heavy skillet or saucepan over medium heat. Add flour and cook, stirring constantly, until bubbly, fragrant and just golden, about 2 minutes.
- Step 2
Whisk in about ⅓ of the milk and bring to a simmer. Repeat twice more with remaining milk, continuing to whisk as sauce thickens and reducing heat if it boils.
- Step 3
Whisk in the cheese and heat through. If sauce is too thick, whisk in a little more milk. Pour into small bowls for dipping and serve with broccoli.

This recipe does not have any added salt. If yours doesn't taste "cheesy" enough, try adding salt and see how it tastes. For those who think it's too thick, try reducing the flour to 2T. If still too thick for your taste, reduce the flour to 1T flour but then reduce the butter to 1T as well. However keep in mind that this sauce is meant to be dunked into, not to coat noodles as in a mac n cheese (which is a thinner sauce to begin and thickens up as it absorbs the starch from the noodles)
With one cup of milk this is more of a paste than a sauce. I had to double the milk and then add extra cheese because it was not cheesy enough.
Easy, quick & rich. Could use a little pepper!
