Ingredients

Yield:1 large, 2 medium, or more smaller pizzas
  • 4small or 2 large zucchini
  • Coarse salt
  • Pizza dough (see recipe)
  • 2 or 3sweet Italian sausages, meat removed from the casing and crumbled
  • 2teaspoons minced garlic

Preparation

  1. Step 1

    Preheat oven to 500 degrees.

  2. Step 2

    Thinly slice zucchini, salt lightly and let sit at least 20 minutes, then drain off any accumulated liquid.

  3. Step 3

    Top pizza rounds with zucchini, sausage and garlic and bake about 15 minutes, or until nicely browned.

Delish. Riffed off this with what we had and it turned out great. Sliced 1 medium zuke thin, like 1/8 inch thin. Salted for 20 min worked great. I think most people know, but cook sausage ahead of time if raw. We used about 2/3 of a pound of ground mild pork sausage. And because we wanted it to be more of a pizza and less flatbready, we added Rao's pizza sauce on premade dough, and added shredded whole milk mozzarella. 18 min in oven did the trick. Will definitely do again.
