Sugar Snap Peas And Prosciutto

Ingredients
- 1pound sugar snap peas
- 1½ounces thinly sliced prosciutto
- 1teaspoon olive oil
- Freshly ground black pepper to taste
Preparation
- Step 1
Bring water to boil for peas. Trim stem ends of peas (the strings will come off with them).
- Step 2
Remove fat, and slice prosciutto into very thin strips.
- Step 3
Cook peas in boiling water for 1 to 1½ minutes, depending on their size. Drain, and set aside.
- Step 4
Meanwhile, saute prosciutto in oil in nonstick pan, stirring to keep pieces separated. Cook about 1 minute, just until prosciutto begins to take on color.
- Step 5
Stir peas into prosciutto, and season with pepper.

Love both of these ingredients, but it needed something more. I added some roasted peppers, a little dijon and some cream; next time I think I'd try some lemon instead.
Nice change of pace. The saltiness of the ham plays off the sweetness of the peas.
Not to my taste.
