Ingredients
Yield:About 2 dozen balls
- 2eggs
- 1cup sugar
- 1cup milk
- 1teaspoon baking soda
- Salt to taste
- Spice (half a teaspoon of mace optional)
- A small piece of butter (1 teaspoon)
- Flour enough to make a stiff batter (whole-wheat flour)
Preparation
- Step 1
Mix together until solid dough, then drop by teaspoonful into hot lard.
Tip
- The lard gives a pronounced flavor. Modern cooks would more happily use Crisco or corn oil.

Haven’t tried it, but the recipe is off. If using soda, some sort of acid needs to be included.

“Modern” cooks might prefer Crisco to lard, but thatalso means preferring trans fats to the healthier cis fats. In New Mexico, they make biscochitos with lard, partly for its flavor and mostly for its role of shortening. “Modern” is not necessarily a recommendation.
