  • Salt, black pepper and oregano, to taste

Preparation

  1. Step 1

    Combine the potatoes, lemon juice, salt, pepper and oregano in a bowl, mix well and allow the potatoes to marinate for an hour or so.

  2. Step 2

    Heat the olive oil in a wok or deep skillet over high heat until it begins to smoke. Add the marinated potatoes and fry them, tossing gently but often, until they begin to brown. Adjust the seasonings, adding additional salt, pepper, lemon juice and oregano, as desired.

  3. Step 3

    Cook until nicely browned and just tender. Do not let the potatoes get so soft that they fall apart.

Greek-"style," yes.
Authentic Greek fries, no. Real Greek fries ARE special, not because of the extra "Greek-style" ingredients, but as a result of a secret practice. Soak peeled and sliced fries in water for an hour or 24. You will have true Greek fries. Coarse salt to complete.

Favourite - cut chunky sized red potatoes (leave skin on) into deep pan or skillet, add the spuds, chopped onion and generous chopped garlic, partially cover with mixture of half white wine and water plus at least half a cup of olive oil, apply heat allowing moisture to steam away - balance cooking time to ensure potatoes firm, but cooked, as liquid disappears and they fry in residual oil - blacken (or not) to choice, serve with chopped parsley. Particularly good with BBQ Steak!

Soaking sliced potatoes in cold water isn't just for Greek Fries, it is what you should do for any fries. And then they should be doubled fried.
