Sausage Stuffing

Ingredients
- 2cups bulk breakfast sausage
- 2medium onions, chopped
- 1 or 2ribs celery, chopped
- Poultry seasoning, to taste
- Salt and black pepper, to taste
- 3 to 4cups cubed day-old white bread
- ½cup chopped parsley
- Melted chicken fat or chicken stock
Preparation
- Step 1
Brown the sausage in a deep skillet, breaking it up but leaving coarse chunks.
- Step 2
Add the onion and celery and saute briefly.
- Step 3
Add the poultry seasoning, salt and pepper. Turn off the heat, add the bread cubes and parsley and toss the mixture thoroughly. Moisten with fat or stock, if desired. Adjust the seasonings and stuff and truss the chicken.
