Ingredients
Yield:1¼ cups
- 1large egg yolk
- 1tablespoon white-wine or cider vinegar
- 2tablespoons Dijon-style mustard
- Salt and freshly ground white pepper to taste
- ¾cup vegetable oil
- 2tablespoons lemon juice
- 3tablespoons finely chopped onion
- 2tablespoons chopped drained capers
- 4tablespoons chopped cornichons or sour pickles
- 3tablespoons finely chopped parsley
Preparation
- Step 1
Place egg yolk in a mixing bowl and add vinegar, mustard, salt
- Step 2
Add oil gradually, beating vigorously with whisk. Add lemon juice.
- Step 3
Add remaining ingredients and blend well. Cover and chill.
