  • 6scallions, chopped
  • 2tablespoons chopped parsley
  • 2tablespoons minced garlic in oil
  • 2 or 3tablespoons olive oil
  • Freshly ground black pepper to taste
  • Crushed red-hot pepper to taste
  • 2teaspoons Dijon-style mustard
  • cup dry white wine
  • 3tablespoons flour
  • 2pints shucked oysters, liquor reserved
  • 212-ounce cans corn niblets
  • 12 to 16ounces fresh or dried linguine
  • ¾cup grated cheddar cheese

Preparation

  1. Step 1

    Bring 3 or 4 quarts of water to boil in a covered pot for linguine.

  2. Step 2

    Saute scallions, parsley and garlic in hot oil over medium heat until softened.

  3. Step 3

    Season with peppers, and add mustard and wine; reduce heat and cook slowly for a minute or two.

  4. Step 4

    Mix flour with enough of the reserved oyster liquor to make a paste. Add the paste and remaining liquor to pan and cook, stirring, until the mixture thickens a little.

  5. Step 5

    Add oysters and corn with liquid from can; cook 3 or 4 minutes over moderate heat, just until oysters begin to curl.

  6. Step 6

    Cook linguine in boiling water according to package directions for dried, or about one minute for fresh.

  7. Step 7

    Serve oyster sauce over linguine, sprinkled with cheese.

This was a surprise recipe for me. By the time I finished it, I was truly skeptical that it would taste good. It doesn't look good, and the corn is weird. But, lo and behold, it was delicious. I guess I have to cultivate a more open mind.

I was skeptical of this dish and I was right. It was pretty awful and a waste of really good oysters. I will not make this again and do not recommend it to anyone. Wish I had eaten the oysters raw and on their own!

Of this recipes ingredients don’t sound good together it’s bc they don’t taste good together. Beware!

Absolutely true! Looks kind of pale but flavor is amazing! I used fresh oysters and doubled the garlic. So good
