  • 15medium-size potatoes (5 to 5½ pounds), peeled and left whole
  • 18-inch chouriço (Portuguese sausage), thinly sliced
  • 4cloves garlic, minced
  • Salt to taste
  • ½pound country bacon cut in 1½-inch dice
  • 1teaspoon red hot peppers or hot pepper sauce
  • 1teaspoon paprika
  • 1 to 1¼cups red wine, approximately

Preparation

  1. Step 1

    Preheat oven to 425 degrees.

  2. Step 2

    Arrange potatoes and sausage in 9-by-14-inch casserole. Sprinkle with garlic, salt, bacon, hot peppers and paprika. Pour 1 cup wine over all.

  3. Step 3

    Cover with foil and cook in oven about an hour, checking occasionally. After an hour, add more wine and cook, uncovered, for 20 minutes, until potatoes are browned.

We make an Italian version of this Fantastic basic recipe (Italian sausage, white wine). Sometimes we don’t even bother with the wine and covering it up. Just bake the sausage and potatoes with lots of olive oil and herbs. Quick dinner, kids love it.

One 8" sausage and 15 potatoes for 20 servings? Seems a bit stingy.

Quartered potatoes, but otherwise followed recipe closely. Delicious-- a potato lover's dream.
