  • ½pound Gruyere cheese
  • ½cup heavy cream
  • 2large eggs, lightly beaten
  • Coarse salt and freshly ground pepper to taste
  • 2tablespoons walnut oil
  • 1tablespoon unsalted butter

Preparation

  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Peel and coarsely grate the potatoes and the cheese (this can be done in a food processor).

  3. Step 3

    Mix the potatoes and cheese with the cream and eggs and season to taste with salt and pepper.

  4. Step 4

    Using the walnut oil, grease a shallow baking dish large enough to spread the potato mixture about 1½ to 2 inches deep. Chop the butter in small pieces and sprinkle on top.

  5. Step 5

    Bake for 35 to 45 minutes, or until browned and bubbling.

I used this as the basis for potato cakes. Made it with extra sharp cheddar, added scallions. Cut the cream in half, next time will omit it. Might need roasted green chile. Cooked on a griddle. The cakes disappeared very quickly.
