Ingredients
Yield:About one and one-half cups
- 2tablespoons olive oil
- ½cup finely chopped onions
- 1teaspoon finely minced garlic
- 2cups peeled, chopped fresh tomatoes
- 1bay leaf
- ½teaspoon dried thyme
- Salt to taste, if desired
- Freshly ground pepper to taste
- 1tablespoon butter
- ÂĽcup chopped fresh basil
Preparation
- Step 1
Heat the oil in a saucepan and add the onions and garlic. Cook, stirring, until they are wilted.
- Step 2
Add the tomatoes, bay leaf, thyme, salt and pepper and bring to the boil. Cover and simmer about 10 minutes. Stir in the butter and basil.
