Preparation

  1. Step 1

    In a medium saucepan, stir together the sugar, 1 cup of water, a pinch of salt and 1 cranberry and bring to a boil. Add the remaining berries and orange rind and simmer, covered, over low heat for 5 minutes. Uncover, raise the heat to medium and simmer for 5 minutes more. Stir in the allspice, Campari and rosewater. Remove from heat and cool at room temperature. The sauce will thicken as it cools.

Excellent as is. I used it with salmon. Tomorrow with the Thanksgiving chicken.

Delicious! Made as accompaniment to Julia Child’s whole roasted duck and Thomas Keller’s leek bread pudding (Ad Hoc) for our COVID Christmas (bubble of 3). Followed recipe exactly, except for maybe more generous with the cranberries. Campari came thru beautifully, rose water delicate, sugar substantial. Will make again for next year’s Christmas goose.
