Ingredients
- ½cup sugar
- ÂĽcup plus 1 tablespoon unsweetened cocoa
- â…“cup hot water
- 4cups skim milk
- Âľteaspoon vanilla extract (see note)
Preparation
- Step 1
Combine sugar and cocoa in a medium-size saucepan; blend in hot water. Cook over medium heat, stirring constantly, until mixture boils. Allow mixture to boil 2 minutes, stirring constantly.
- Step 2
Add milk and heat to serving temperature (do not boil). Remove from heat and add vanilla extract.
- If you would like an unusually flavored cocoa, you might substitute for the vanilla extract either ½ teaspoon of maple, mint or orange extract; 2 teaspoons instant coffee granules, or ⅛ teaspoon each of cinnamon and nutmeg.

Skim milk? bleh. Full fat organic thank you. No worries, those calories will fall away while shoveling snow and hauling in firewood today. :-)
Replace 1/4 of milk with heavy whipping cream for a super creamy taste.
I like to add about 1/2 tsp of espresso powder to the mix. And definitely whole milk, forget that skim nonsense.
Has anyone tried evaporated milk? Thinking of giving as a gift and making homemade marshmallows recipe.
I've been telling people there's a new Swiss Miss in town! I've been whipping this up regularly the last month or so. Love it! I cut the recipe in half and divide it into two jars and store in the fridge. I just heat it up in the microwave 30 seconds at a time until it's steaming and usually add a glug of half and half. FYI: I just noticed the recipe is exactly the one on the Hersheys Cocoa container minus the dash of salt.
I agree it is overly sweet and that you want whole milk. I will cut the sugar in half next time.
