  • 2medium onions, chopped
  • 4medium carrots, diced small
  • tablespoons minced garlic
  • 1large head savoy cabbage, halved and sliced into wide ribbons
  • 2tablespoons caraway seeds
  • ¼cup apple cider
  • ¼cup apple-cider vinegar
  • 2Granny Smith apples, peeled, cored, and diced
  • 1bay leaf
  • Salt and freshly ground black pepper
  • 2tablespoons butter

Preparation

  1. Step 1

    In a large, wide pot (8 quarts or larger), saute bacon over medium heat until fat is rendered and the bacon begins to crisp. Add onions and carrots; saute for about 3 minutes. Add garlic; saute for 2 minutes.

  2. Step 2

    Add cabbage, caraway seeds, apple cider, vinegar, apples, bay leaf, and salt and pepper to taste. Saute, stirring, until the cabbage is tender, 10 to 15 minutes. Add butter, and stir well. Serve hot.

Fantastic! I made with purple cabbage and added bok Choy cabbage since I had some. The colors with the purple, orange, green and white cabbages and carrot were beautiful! The bacon is smoky and salty and not overwhelming. The caraway is essential. The Apple is fresh and sweet. What a delightful dish even non-lovers of cabbage will love!

I added some brown sugar, and I grated the apples in. That's it. OK, fine, I added a bit more butter. It was great, loved by all.

Used apple juice - and added a pinch of dried chilies. Maybe would add slightly more heat next time.

This was very good; and amazing as leftovers the next day. The sweet/savory/ tangy/smoky elements were perfectly balanced once they got to mingle. I cooked this a bit longer than recommended as I like the veggies softer. Next time a little less caraway.
