Ingredients
Yield:4 servings
- 2tablespoons Grey Poupon Dijon mustard
- ¼cup olive oil
- 1tablespoon red-wine vinegar
- 2scallions, thinly sliced
- ¼teaspoon dried basil
- ⅛teaspoon pepper
- 1tablespoon sugar
- ¼pound fresh mushrooms, cleaned, patted dry and sliced
- 1pint cherry tomatoes
- 1package (9 ounces) frozen artichoke hearts
- 1bunch watercress
Preparation
- Step 1
In a large bowl, combine mustard, oil, vinegar, scallions, basil, pepper and sugar.
- Step 2
Mix in mushrooms, tomatoes and artichokes. Cover.
- Step 3
Chill several hours or overnight.
- Step 4
Spoon over a bed of watercress.
