Ingredients
Yield:4 servings
- 1tablespoon vegetable oil
- 1onion, sliced
- 1garlic, minced
- 4veal shanks
- Coarse salt and freshly ground pepper
- 2cups canned tomatoes
- 2cups chicken or veal stock
Preparation
- Step 1
Heat the oil in a heavy fireproof casserole. Gently fry the onions and garlic until soft, without browning.
- Step 2
Add the remaining ingredients, cover and simmer for one-and-a-half hours. If more liquid is needed, add more stock.
Tip
- Serve this with risotto milanese.

This is a wonderful basic recipe, economical & easy ~ & can be added to, like adding a pound of soaked white beans, a few good dollops of more liquid like red wine or marsala ~ all classic, truly yummy Italian cuisine. Tastes even better reheated the next day.
