These tasty sausage and melted provolone sandwiches are a snap to put together and can be made with grilled, roasted or pan-fried sausages. A quick slaw of cabbage, carrots, mayonnaise and pickled peppers adds a moist and spicy crunch.

  • 4cups shredded cabbage
  • 2medium carrots, peeled and grated
  • 3tablespoons mayonnaise
  • 3pickled peppers, finely chopped, plus more for garnish
  • 1tablespoon pickled-pepper juice, or more to taste
  • ¼teaspoon kosher salt
  • teaspoon black pepper
  • 4hero or ciabatta rolls, each about 8 to 10 inches long, split
  • ½pound sliced provolone
  • 4cooked Italian sausages, at room temperature

Preparation

  1. Step 1

    In large bowl, toss together the cabbage, carrots, mayonnaise, the 3 chopped pickled peppers, pepper juice, salt and pepper. Let the mixture stand for 10 minutes.

  2. Step 2

    Meanwhile, heat the broiler. Arrange the rolls, split side up, on a baking sheet. Line the inside of each roll with provolone. Arrange the sausages on the baking sheet next to the rolls. Put the sheet under the broiler. Cook until the cheese is bubbling and the sausages are warm, 1 to 2 minutes (make sure the rolls do not burn).

  3. Step 3

    Place a sausage inside each roll. Top generously with coleslaw and sprinkle with additional pickled peppers. Serve any additional coleslaw on the side.

yes! and if they put up a recipe for "sausage and peppers" people would be all up in the comments saying "who needs a recipe for this?!" (or, perhaps more likely, "this is not exactly how my great great great grandfather made it, how dare you nyt, and shame on all of you who made it this way!") suggestions are great, but if you want to make a different recipe, just make a different recipe and spare the rest of us.

Sauteed green (or red) peppers and sautéed onions would be my choice for the vegetable garnish, not cole slaw or cabbage salad.

Good Italian sausage is easy to get in New York but in the provinces, it is much harder to find the real deal. And for those of us in Europe, it is nearly impossible. Even imported Italian sausage, from Italy, is not like a good NYC Italian sausage. American Italian sausage is a regional speciality! So can we get a recipe for making Italian sausage from scratch at home that tastes as good as Faicco's?

Use havarti Buy pickled pepperoncini (and just use one) Add mustard

A very tasty different sausage! The pickled peppers really make it. Next time I will add some Dijon to the mayo.

The coleslaw was not a great addition. We like the Havarti cheese and will probably add grilled onions and peppers next time.
