Ingredients
- 1cup cold heavy cream
- 1teaspoon pure vanilla extract
- 1(14-ounce) can cold sweetened condensed milk
Preparation
- Step 1
In a mixer, whip heavy cream just until it begins to thicken. Add vanilla and whip until soft peaks form. With mixer running, slowly pour in condensed milk and whip until high peaks form.

Transfer into a container or bowl for freezing. Freeze at least 4 hours or overnight.

Toasted marshmallow variation. To softy whipped cream, add only half the can of sweetened condensed milk. When whipped in, stop. Under the broiler, roast 2-3 cups mini marshmallows until golden ( best if done on a foil lined tray). Immediately beat into cream mixture until high peaks form. Adding chocolate bits now and broken graham crackers turns it into s'mores ice cream. freeze 6h or until firm.
Make your own sweetened condensed milk and add (infuse with) tons of fresh mint while still warm. Let cool, strain and chill until cold. Proceed with recipe above. Add chocolate chips, bits of brownie or fresh pineapple upon serving for mind blowingness.
Here we get sweetened condensed coconut milk (I believe Trader Joe's also sells a version). I swap this out for regular condensed milk and a can of coconut cream (coconut milk also works, but makes it a bit more icy). A squirt of lime juice and that's it. Vegan (not that we are, but heck) and soooo good.
Make sure none of the ingredients are room temp, my condensed milk was room temp and it came out "less whipped", if I could say that.
It was ok, but I think freezer ice cream would be better
The two ingredients plus vanilla sounded perfect, and they were. Lovely ice cream. I could only find a smaller tube of condensed milk and it came a little too sweet for me, though into half i did add some powdered (not freezedried) instant coffee, and i couldn't decide which i liked best. So i will try with even less, though i suspect it's necessary to prevent crystal formation?
