  1. Step 1

    In bowl of an electric mixer, beat egg white on medium speed until it begins to foam, about 1 minute. Add sugar tablespoon by tablespoon as mixer is running. Continue to beat until egg white stiffens to soft peaks and is shiny, 5 minutes. Dollop onto hot chocolate.

Tip
  • If you started with a whole egg and you would like an even richer hot chocolate, whisk egg yolk into cocoa and chocolate mixture after you have taken it off the heat. Make sure to whisk vigorously so it does not clump. If it does, strain before serving.
