Preparation

  1. Step 1

    Drop spinach into boiling water to cover with salt. Let cook about 1 minute and drain. Run under cold running water and press to extract excess liquid.

  2. Step 2

    Chop spinach as finely as possible or process it in a food processor or electric blender. Blend with mayonnaise. Add lemon juice.
