  • 1cup (plus 2 teaspoons) sugar
  • 1cup flour
  • 1teaspoon baking powder
  • Pinch salt
  • 12Italian prune plums

Preparation

  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Beat eggs, prunes and 1 cup of the sugar until blended.

  3. Step 3

    Beat in flour, baking powder and pinch of salt. Spoon into ungreased 8-, 9- or 10-inch spring form.

  4. Step 4

    Split and pit the plums, and place them on batter, skin side down, in concentric circles.

  5. Step 5

    Sprinkle generously with the cinnamon, 2 teaspoons of sugar and a few squeezes of lemon juice.

  6. Step 6

    Bake for about 40 minutes, until toothpick inserted near center comes out clean. Cool to lukewarm before serving. Can be reheated.

Comes together VERY quickly, made with Italian prune plums we had frozen from the fall and some canned apricots for a splash of color. Not something that will blow your mind but very pleasing and for the amount of time it took to make definitely worth making again when you have dinner guests and need a quick, satisfying dessert. Probably could substitute any fruit for the topping that you have on hand.
