  • ¼pound lean bacon or ham, cut into ¼-inch dice
  • cups finely chopped onion
  • cups or more water
  • 2cups shell beans (also known as cranberry beans) or lima beans, out of the shells
  • 3cups corn kernels, fresh or frozen
  • ½cup heavy cream
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 2tablespoons finely chopped chives

Preparation

  1. Step 1

    Put the bacon cubes in a saucepan and add the onion. Cook, stirring occasionally, until the onion is wilted.

  2. Step 2

    Add the water and beans and cook until beans are tender. The cooking time will range from 20 to 40 minutes or longer, depending on the age of the beans. It may be necessary to add more water as the beans cook. Add the corn kernels and cream and cook about five minutes longer. Add salt and pepper to taste and stir in the chives.

I cooked 4 lobsters, used shells to make a stock, which I used for water in recipe. Sliced lobster and added at the end. So delicious. Served with grilled polenta. Serves 10. A keeper!
