Ingredients

Yield:1 large, 2 medium, or more smaller pizzas
  • Pizza dough (see recipe)
  • ½cup shredded or cubed mozzarella
  • ½cup shredded or cubed fontina or taleggio
  • ½cup freshly grated pecorino Romano
  • ½cup freshly grated Parmesan
  • ½cup coarsely chopped or torn basil

Preparation

  1. Step 1

    Preheat oven to 500 degrees.

  2. Step 2

    Top dough with all cheeses. Bake about 10 minutes, or until nearly done. Sprinkle with basil and finish baking.

When I opened the oven to sprinkle the basil, I smelled deliciousness. I have to admit I cheated a bit with this recipe which I Almost never do. But I used a store-bought crust because I had one, and I had some mushrooms left over that I had to you use up so I sliced and sautéed them and threw them on with the basil . It was terrific, but am now inspired to go back to making my own crust. And the mushroom addition didn’t hurt a bit!
