Preparation

    In a large pressure cooker, combine all the ingredients except the parsley. Add enough water to just cover the meat, being careful that the total volume doesn't exceed more that â…” of the pot.

  2. Step 2

    Following the manufacturer's instructions for the pressure cooker, cover pan and cook for 45 minutes, or until fork-tender. Stir in the parsley and serve.

Used broccolini in place of celery and added an inch of peeled ginger sliced into matchsticks. Will use green onions instead of parsley.

In an affront to secret-keepers everywhere, this recipe lacks a secret. A "Secret Stew" that flagrantly lacks a secret, or where 'the secret is that there IS no secret' is a squandered opportunity to make someone feel as though they're being brought into the fold when you share an otherwise delicious recipe. ...in full disclosure, I added a 3" sprig of rosemary prior to pressure cooking.
