Ingredients

Yield:100 servings
  • 5pounds chopped white onions
  • Butter or oil for sauteeing
  • White wine to taste
  • 5pounds white and dark chopped, cooked turkey meat
  • Worcestershire sauce to taste
  • 5pounds sliced and cored red apples, with peel
  • 2pounds shelled walnuts
  • 4pounds cooked, peeled chestnuts
  • pounds pignoli nuts
  • 2pounds white raisins
  • 2pounds pulverized pineapple, with juice
  • 2tablespoons thyme
  • 1gallon turkey or chicken broth
  • 5 to 6pounds seasoned croutons
  • Pepper and salt to taste
  • Margarine for greasing

Preparation

  1. Step 1

    Preheat oven to 375 degrees.

  2. Step 2

    In large skillet, sautee onions in butter or cooking oil. Add generous splash of white wine and all the turkey meat. Add Worcestershire sauce.

  3. Step 3

    Add sliced apples, walnuts, chestnuts and pignoli nuts. Add raisins, pineapple and thyme. Slowly pour in broth, and mix until all ingredients are coated. Add croutons. Mix ingredients thoroughly; add salt and pepper.

  4. Step 4

    Transfer ingredients into several large baking pans greased with margarine. Bake 35 to 40 minutes.

  5. Step 5

    Cool for a few minutes before serving with an ice-cream scoop.
