This recipe came to us in 1987 from Eric Michael Gillett, then the ringmaster for the Ringling Brothers and Barnum & Bailey Circus. Citrus zest and fresh, grated ginger set this recipe apart from the rest.

  • 3Granny Smith apples, about 1½ pounds
  • 1teaspoon lemon juice
  • Grated zest of 1 lemon
  • Grated zest of 1 orange
  • 1teaspoon freshly grated ginger
  • ¼cup butter
  • 6tablespoons flour
  • ½cup sugar
  • ½teaspoon cinnamon

Preparation

  1. Step 1

    Peel, quarter and core apples and slice each into sixteenths.

  2. Step 2

    Mix slices with lemon juice, zest and grated ginger.

  3. Step 3

    Cut butter into small bits and mix with flour, sugar and cinnamon until mixture resembles coarse crumbs.

  4. Step 4

    Place apples in bottom of 4 buttered baking dishes (1½- to 2-cup capacity) and sprinkle butter mixture over top.

  5. Step 5

    Bake at 350 degrees for 35 to 40 minutes, or until apples are cooked but still hold their shape.

  6. Step 6

    Serve with clotted cream or heavy cream alongside.

Can this recipe be made in one large baking dish rather than four individual dishes? Is there a change in the cooking time?

I just made it in one dish and cooked it about 50 minutes total. Worked great.

Made this in an 8 x 8 inch glass pan and it worked out fine. I used the sweeter Honey Crisp apples, so I cut the sugar to 1/8th cup. Didn't have a lemon, so I used a lime. And I increased the amount of topping by adding crushed flaked cereal. Would make again and increase the amount of ginger.

Will definitely be making again. Quick to put together and so delicious topped with vanilla ice cream. I split it between four dishes so everyone had the crispy edges. I like ginger so ill try it with a little more next time.

This was WONDERFUL on a cold night! I cooked in two small oven safe dishes as I didn’t have four, and poured on a little cold cream while it was still warm. Everyone loved it, including me! I didn’t change the ingredients at all.

This recipe is a place to start. I omitted the topping. Instead, I sprinkled a few dashes of allspice, nutmeg, mace, coriander; extra dashes of ground ginger (no fresh ginger); and used the juice of a whole lemon. I chunk-chopped approximately a dozen unpeeled apples, tossed them with the juice of a whole lemon, sprinkled the spices, and peels, and mixed well. As I planned to freeze half of the mixture, I oven-baked the mixture for approx. 20 mins. It was delicious!
