  • 7slices bacon, cut crosswise into ½-inch pieces
  • 4tablespoons butter
  • cup all-purpose flour
  • 2cups whole milk

Preparation

  1. Step 1

    Place leeks in a large bowl or a sink filled with water. Toss gently to remove any sand, changing water as necessary. Drain well.

  2. Step 2

    In large skillet over medium-low heat, fry bacon until it just begins to brown. Discard all but 1 tablespoon of fat in pan. Add leeks, and saute until wilted, about 10 minutes. Transfer to large bowl, and set aside.

  3. Step 3

    Preheat oven to 325 degrees. In a medium saucepan over low heat, melt butter and gradually whisk in flour to make smooth paste. Slowly whisk in milk until mixture is smooth. Remove from heat, and season with salt and pepper to taste. 4. Whisk in eggs one at a time. Pour sauce over leeks, and toss gently to mix. Transfer to a shallow 2-quart baking dish. Smooth top, and sprinkle with cheese. Bake until set and golden brown, about 30 minutes. Serve hot.

I'd like to try this, but I would appreciate a weight or volume measure for the leeks.
Ten medium leeks sounds like a boatload, but how big a boatload? Thanks.

This made a nice side dish to lobster on New Years Eve. On the leeks, the prep time on cleaning them is not insignificant, but can all be done ahead. I should have started with the largest size sauté pan to fit them all in, and will do that next time. Proportions are great, and I think this is fun to make. Something different, and a good partner for grilled meats and seafood.

Reminder that the leeks cook down so it does indeed fit. I used 8 large leeks. This is much like a crustless quiche- egg, milk, vegetable. Leeks and bacon are a great combo!

Added uncooked cauliflower in small florets to the leeks, upped the temperature to 350F, time still 30min, if you want your florets done but crisp. Delicious
