Preparation

  1. Step 1

    Preheat oven to 450 degrees. Put butter in a nonstick or well-seasoned 12-inch skillet and place in oven; when butter foams, remove skillet from oven.

  2. Step 2

    In a large bowl, combine dry ingredients. In another bowl, beat eggs well, then add milk and vanilla, if you're using it, to eggs. When oven is hot, whisk egg mixture into flour mixture and combine well, but do not overbeat. Pour into skillet.

  3. Step 3

    Bake 20 minutes, or until pancake is puffy and lightly browned. Sprinkle with confectioners' sugar, add lemon juice and fruit if you're using them; serve immediately.

This is a more substantial version of David Eyre's pancake and not as tasty - but not bad. Needs at least 1/8 tsp. salt (a pinch is not enough).

I added an extra tsp of baking powder, used a whole tsp of vanilla, and sprinkled diced apples on top before baking. After 20 minutes in the oven, I sprinkled granulated sugar all over and put it under the broiler for a minute or two. I will try it with blueberries and pears next, bananas would work, too.

I just made this and I like it much better than Dutch Baby. It has more of a “bite”. To serve, I stewed some blueberries with lemon peel and a little sugar until thickened and added lemon juice and a dash of Kirsch. It was very good!

Used the little tweaks for salt and baking powder Very eggy and thick, dense cake Tasted best with lemon and confections sugar but not great. Would not make again. And my family did not like at all.
