Apple-Walnut Stuffing

Ingredients
Yield:8 to 10 servings
- 1cup onion, chopped
- ½cup celery, chopped
- 1tablespoon butter or oil
- 5-6 cups bread, cubed
- 1cup chicken broth
- 1½cups apples, peeled and diced
- 1cup cooked pastrami (approximately â…“ pound), chopped coarsely
- 1cup walnuts, chopped
- ¼cup parsley, chopped
- 2eggs, beaten
- 1teaspoon sage, optional
- ½teaspoon thyme, optional
- ½teaspoon salt
- ½teaspoon pepper
Preparation
- Step 1
Saute onions and celery in butter or oil until soft. Transfer to large bowl.
- Step 2
Moisten bread with broth and add to sauteed vegetables.
- Step 3
Add remaining ingredients and mix well.
- Step 4
Transfer to casserole and bake 35 minutes at 350 degrees.
