Halibut Steaks With Pesto Sauce

Ingredients
- 2halibut steaks, cut in half
- 4tablespoons pesto sauce (see above)
- Coarse salt and freshly ground pepper to taste
- 2limes or lemons
Preparation
- Step 1
Wipe the steaks dry with paper towels. Spread the pesto on both sides of the steaks and allow them to sit for an hour at room temperature.
- Step 2
Heat coals or broiler and grill the steaks on both sides until cooked. Remove from heat, season with salt and pepper and serve, garnished with lemon or lime, cut in half.
- Corn, boiled potatoes and tomato salad go well with this dish.

Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

Most of the pesto cooked off and the halibut was ok, but nothing like want I used to get at a restaurant here called Halibut's, hope they re-open when they find a new place.
Halibut is too much $$ for just ok dish.
Agree with others: this recipe is not helpful, except that it did validate the idea of pesto on halibut for me and provided an idea for the side of tomato couscous salad. About 5-7 minutes to get a nice "paper bag brown" on the top, and then flip to cook through. I added about a tablespoon of pesto per filet, turned off heat, and covered to heat pesto.
Nice change of pace. I had homemade pesto, sans Parmesan. Since the oven was on I roasted at 425 for 10 minutes. Perfect.
Used Kirkland (Costco) pre-made pesto. Slathered it on both sides and let sit for an hour+ as directed. Cooked on griddle, medium heat 5 minutes per side. Doesn't get much easier, and delicious.
