Preparation

  1. Step 1

Put the yeast, water and oil into the container of a food processor.

  2. Step 2

Add the flour and salt and process until the mixture becomes a soft but firm and kneadable mixture.

  3. Step 3

If a food processor is not used, soak the yeast in the water and oil. Put the flour and salt into a mixing bowl. Add the yeast liquid and blend by hand.

  4. Step 4

Turn the dough out onto a lightly floured board and knead briefly. Shape into a ball. Place the ball in a mixing bowl and cover. Let stand until double in bulk, about 45 minutes to an hour. It is now ready to be used for pizzas, calzoni and soon.

Other than needing a bit more salt, this is a lovely pizza dough.

This is a good, all-around easy pizza dough. It's great for a quick pizza with the family. I put the dough in a proofer with a wet towel covering it, and it rose beautifully. I would also suggest adding more salt, as other commenters here have noted.

I have been making this pizza dough for decades - it is on a card cut from the newspaper! It is quick, delicious, and has a nice texture. I have always made my pizzas in a 9x13 inch sheet pan in the oven, but was recently given a gas fired pizza oven. This crust is excellent in the sheet pan, I am still experimenting with the pizza oven. Working on making it as thin as possible.

edit to last note: use 2 9x13 sheet pans for this recipe
