The trick is using straight-up pomegranate juice with no added sugar. Trader Joe's sells it, I believe. It's a holiday classic for us. Frozen pomegranate seeds also made a nice garnish.
Highly recommend halving the pomegranate juice. Helps bring out the sparkle of the Prosecco. Making as written was really flat.
Seemed like a waste of good dry prosecco. Much too sweet with the juice. I may try again with less pomegranate--maybe just a third. Looked pretty, though.
Very simple and yet festive, we used substantially less POM than prosecco (just enough for a pink color) and we used POM because it doesn't have added sugar (as opposed to some other pomegranate juice brands that have a lot of added sugar.)
This was surprisingly fantastic! Used POM, 1:3 with Prosecco. Added cranberries for garnish. Really light, wonderful drink throughout thanksgiving dinner!
Very nice on Christmas Day. I used about 1/2 ounce of pomegranate juice to 3 oz prosecco and that was plenty sweet. Orange zest stood in nicely for lime. Chin-chin!
