Preparation

  1. Step 1

In a food processor, layer the trout, 1½ packages cream cheese, basil and 3 tablespoons horseradish. Add white pepper and scallions or chives. Pulse several times until mixture is roughly blended. Add remaining half-package of cream cheese, and pulse again until mixture is smooth. Taste, and add additional horseradish if needed.

  2. Step 2

Transfer mixture to a wide serving bowl. Halve tomatoes lengthwise and remove seeds. Cut tomatoes into ½-inch dice and pat dry on paper towels. Fold tomatoes into trout spread. Serve with crackers or slices of cucumber, or refrigerate and use within three days.

Tip
  • Grilled trout may be substituted, with the addition of finely grated zest and juice of 1 lemon.

I substituted home smoked Marlin as Trout is not locally available where I live. I also used dill instead of basil and added a bit of chopped cilantro. I used fresh plain yogurt instead of light cream cheese. Wonderfully balanced and delicious dip

This was super easy & delicious! I used good smoked trout, 1 package regular and 1 package light cream cheese, dill instead of basil (basil sounded weird to me?), half chives/half scallions. No tomato. Really good with rye crackers and with bagel chips!
